Smoke Pork Enchiladas
- Leftover smoked pork - Tenderloin, Butt Etc....
- 2 pkgs grated cheese - I used mexican blend.
- 1 lg can enchilada sauce - I used red medium
- 1 can diced tomatoes - mine was mixed with garlic but you could use any blend
- 20 corn tortillas
This is what I do to make it go quick I take my tortilla's and spray them with Canola oil and put them in the microwave for a few minutes this will make them warm, soft and easy to manage. Next I chop up the the pork into small pieces easy enough to mange rolling up in your tortillas. Put your meat and some of cheese in the tortilla roll it up tightly and line them in a row in a casserole dish. Once the dish is full you can sprinkle a little chili rub over the enchiladas ( this is optional ). Pour the can of the enchilada sauce over the whole thing and then pour the diced tomatoes over the spreading it evenly over the enchiladas. Sprinkle the remaining cheese over the whole thing. Now here is where you can have a choice to either crank up the BBQ again and cook them over open flame or put them in the oven at 350 for half an hour. Since it is still nice out I'm taking advantage of being outside and cooking it in the BBQ this will really add more smokey flavor to the mix. Muey delicioso! Let them coo for about 15 min before serving add a little sour cream and possibly some hot sauce with a side of spanish rice you've got a meal. Good luck and happy BBQing.
PS.. Don't let the wife catch you using her nice Pyrex glass on your grill you might get the stink eye - until they taste it....
OMG this was one of if not the best dinner. I love being mairred to a man that is such a great cool. Hope he makes this one again soon.
