Here is a little ditty about BBQ. These guys are funny they explain what the differences of how southern states BBQ in song form. For people that really don't know about BBQ other than it is something you do on the weekend with friends. You are a little missed informed because barbecue means slow cooked smoked foods. how you prep it and type of sauce you may or may not use makes all the difference as well. As the song explains of which state does waht with their BBQ it might give you a better understanding of how to find your information on what you like or give you ideas of something you didn't know about. BBQ Leftovers? Enchiladas sound good!

Last night I had some supremo BBQ Pork tenderloins man it was good! But I had alot leftover since I smoke a whole tenderloin for a family of six so that means some killer leftovers. You have many options of what to do with it like some pork sandwiches or use it to make some chili but tonight I made some super simple smoked pork enchiladas.

Trio Pork Tenderloin

So it has been awhile since I've posted but here is the primo 3 shot for ya. Saturday I was suppose to have guests over but plans got changed unknowingly and so here I am with a whole tenderloin. What shall I do? Since I'm not going to let it go to waste I cut it up into 3 roasts and used 3 seperate rubs in which I'll sauce 2 of them and use the leftovers tommorrow and have smoked pork enchiladas.
