Chili seasoning (rub)



This is one of my favorite rubs it can have a tendency to be a little spicy but can be tempered with how many of the spicy peppers you put in to make your rub. This chili rub is made from dried peppers and gives off better flavors than most of the crap on the shelves in the stores even though there is a few that are good but usually cost more. This rub will give that higher quality flavor and yield at least twice the amount that you can buy in the store for the same price or cheaper.









1 bag of dried Pasilla peppers (aka Chile Negro)
1 bag of dried Anaheim peppers (aka California Chili Pods)
About a dozen dried red peppers (aka Chile Arbol Entero or red pepper flakes)
1/4 cup cumin seed or powder
2 tbsp peppercorns
1/4 cup oregano
2 tbsp thyme
2 tbsp salt
1/4 cup paprika
1/4 dried crushed garlic or powder


for the Pasilla and Anaheims cut off the stems and remove the seeds because they have the tendency to be bitter and then grind the skins to a likeable consistency. and then mix it all together and grind it all together, pending on the size of your grinder you may need to grind everything in batches and then mix in a bowl now you can alter the heat level of this by adjusting the red peppers the amount I have hear is a medium heat and these pepper you should use the seeds because they are more spicy and not bitter but you want more heat add more and and less , you got it do not put as many in. this should yield between 2-3 spice bottles so you can have stock in your pantry or share with friends.
